How To Make Cilantro Lime Rice In Instant Pot

To make this recipe start with rinsing the long grain rice in a mesh strainer under running warm water.

Clean until the water is clear and put the washed rice into your pressure cooker.

When you use long grain rice add about 1 cup to 1¼ cup of water per cup of rice to the Instant Pot. Use the same cup you used to measure the rice.

Now add a teaspoon of olive oil and stir. Water and oil do not mix very well but still, give it a whirl so the rice can absorb both.

Close the lid of your Instant Pot and secure it. Select the Pressure Cook or Manual option and set the timer to 4 minutes.

When the cooking time is done natural release for 5 minutes and then quick release the remaining pressure.

Fluff the rice with a fork but be careful to not damage the inner pot.

Take a medium-sized bowl and combine the lime juice, olive oil, and half of the chopped cilantro.

  • Refrigerator – you can store rice in the refrigerator for one day. I never leave rice in the fridge longer than a day. Store it in a Ziploc bag or an airtight container
  • Freezer – want to keep it longer you can store this rice in the freezer. Put the rice in an airtight container or a Ziploc bag. You can store it in the freezer for up to 1 month. Longer is possible but can have an impact on the moisture and taste of the rice

How To Reheat Cilantro Lime Rice

You have several options to reheat your lime rice. For food safety reasons, make sure that the internal temperature reaches at least 165°F.

  • Instant Pot – you cooked the rice in an Instant Pot and you can use it to reheat rice. The easiest way is to put the cilantro lime rice in a glass bowl. Add 1 cup of water into the Instant Pot and put the rice on a trivet. Close the Instant Pot and secure it. Select the steam option and put the timer to 2 minutes. Quick-release and your rice is warm
  • Air Fryer – you can also put it in a cake bucket spray with some cooking spray or olive oil. Preheat the Air Fryer to 320℉ for 3 minutes before adding the cake pan to the Air Fryer basket. Air Fry the rice for 10 minutes when rice is frozen else 8 minutes is enough. Increase the temperature to 360℉ and Air Fry for another 5 minutes. Stir once more and your cilantro lime rice is ready to serve
  • Cast-iron skillet – you can reheat your rice in a cast iron skillet or wok. Preheat the skillet and add a little bit of vegetable oil. Add the rice and stir it regularly on medium heat to prevent it from sticking to the pan. Do not heat the pan too hot at the beginning because all the cold rice will stick to the pan straight away
  • microwave – put your cilantro rice in a microwave-friendly container with a lid. Add 1 to 2 tablespoons of water to the rice. Cover the rice and microwave for 2 minutes. Stir the rice and heat for another 1 to 2 minutes. Again, stir the rice should be hot. Serve immediately
